Chicken Chili

Chicken Chili
1 cup finely chopped onion
4 tbs chopped fresh garlic
1 whole Jalapeno, diced with seeds
2 tsp ground cumin
2 tsp chili powder
1 1/2 tbs salt
2 lbs ground chicken (dark meat preferable)
Extra red pepper flakes to adjust flavor…optional
1 cup chopped fresh tomatoes
1 qt (32oz) diced canned tomatoes
fresh chopped cilantro
vegetable oil

Directions: In a deep pan, add oil and saute the first six ingredients until well cooked and starting to brown. Add the chicken and brown for about 10 minutes or until fully cooked. Taste for seasonings and adjust to taste…salt pepper, heat,,,etc. add the canned tomatoes and cook for 15 minutes. Add the Cilantro and fresh tomatoes, then taste to make sure it’s seasoned properly.Use it in tacos, soft tortillas or as a dip.
